Gluten-free, Paleo and delicious

As a Certified Nutritional Counselor, I am always checking out the newest  “fad” and other diet plans that are out there.  Right now, I am researching Paleo.  Although I do not agree with all of the ways, there is much merit to it.

In the 12 week series of classes that I teach, I recommend staying away from all processed foods, sugars, and other “white” foods. Omit or at least Limit caffeine and stay away from grains for first 6 weeks, then whole grains  are slowly added back in.  Great way to find out if you have any sensitivities or intolerance to grains.

Lots of fresh and steamed vegetables, fresh fruits, leans proteins, nuts, seeds, beans & legumes are allowed.  And for those who are not lactose intolerant, dairy in the form of yogurt, cottage cheese and sour cream.

So I have been looking for a good gluten free, Paleo coffee cake recipe.  I found one and tweaked it a bit.  It was DELICIOUS and MOIST!  Hope you like it!

COFFEE CAKE (Paleo & Gluten –Free)               Serves about 9.

INGREDIENTS, CAKE PART

¾ cup Coconut flour

¼ cup Millet flour (can substitute Almond flour)

½ tsp sea salt

1 tsp ground cinnamon

8 large eggs (organic, if you can) or (4 large eggs & 1 cup eggs whites, cake will be a bit drier…just sayin’)

1 tsp baking soda

½ cup plain coconut milk yogurt or (plain yogurt if using dairy, NOT non-fat)

5 TBL coconut oil, slightly melted or (5 TBL unsalted butter)

¼ cup honey (local or clover is better) can use up to ½ cup for additional sweetness

1 TBL real vanilla extract

**INGREDIENTS, TOPPING (My FAVORITE!)

1 ½ cup unsalted nuts (I used almonds…use what you like)

2 tsp ground cinnamon

4 TBL honey (local or clover is better

4 TBL coconut oil, cold and cut into tablespoons or (5 TBL unsalted butter)

DIRECTIONS:

Preheat oven to 325 F and adjust rack to middle position.

Place all the batter ingredients in a blender or food processor and blend until smooth.  (Batter should be about consistency of cake batter, only a bit thicker) Pour batter into a well greased & floured 8 X 8 glass baking dish (*I brushed on olive oil liberally and dusted with coconut flour)

Clean your batter bowl and place nuts in food processor and pulse till coarsely chopped.  Add last 3 topping ingredients.  Pulse just until combined and ingredients bind together.  I mixed mine too fine; it’s better coarser than mine.

Drop spoonfuls of batter into batter and using a butter knife, swirl topping into top layer of batter.

Bake for 45 minutes or until golden brown.  Cool for 20 minutes.  Be careful when removing from dish.  You may have to go around the edges and under with a spatula before removing.  My topping mostly sunk to the bottom (Probably because I doubled it) so I just left the cake upside down.  Cut & serve right away.  Best when eaten the day it is made.  Enjoy!

*The first time I made this I used an air bake aluminum cake pan and just used oil…my cake STUCK a lot.  The next time I used a glass 8 X 8 baking dish, oiled and floured, MUCH BETTER!                                                                                         **Sometimes, okay MOST of the time I double the topping recipe.

Basic gluten free Paleo bread

Ingredients:

*1 1/2 cups blanched almond flour (you can make your own by grinding whole blanched almonds in a food processor or spice grinder)

*½ cup millet flour

*2 Tablespoons coconut flour

¼ cup ground golden flaxseed

¼ teaspoon sea salt

½ teaspoon baking soda

5 large eggs (or 3 whole and 3 egg whites) at room temperature is best

1 ½ tablespoons coconut oil (I use Wildtree organic)

1 Tablespoon honey (Local is available)

1 Tablespoon apple cider vinegar (I use Bragg’s)

Directions:

  1. Place flours, flaxseed, salt & baking soda in a food processor.
  2. Pulse ingredients together.
  3. Mix remaining ingredients in separate container and slowly add to flour mixture, pulsing after each pour just until mixed.
  4. Transfer to a greased loaf pan. (I used a glass pan and I brushed the sides generously with olive oil)
  5. Bake at 350 for 30 minutes.
  6. Cool in the pan. I use a spatula to gently unstick any areas on the pan, and then it should slide out pretty well after it has cooled.
  7. Enjoy! I like to drizzle a little honey on top.

NOTE:  You can add your favorite spices, nuts, fresh berries or other fresh or frozen fruits to the batter.

*You can also use any combination of the above nut & seed flours or any you prefer to get the flavor you like.

Pause and Thank

This is such a busy time of year!  Running here and there, searching for the perfect gifts, planning the perfect meals, while our plates are already full with putting in hours outside the home, taking care of children, spouses, parents, attending church services, volunteering, catching up with extended family and so much more.  How can we ever get it all done?!  What if the plans don’t go right?

I would encourage you to do what I do.  I plan the best I can.  Something will go wrong, but it’s okay.  I am going to leave the outcome up to The LORD…

I am going to FOCUS on HIM this THANKSGIVING.  I am going to PAUSE, and be THANKFUL for ALL He has BLESSED me with.

“I am still confident of this: I will see the goodness of the LORD in the land of the living. Wait for the LORD; be strong and take heart and wait for the LORD”. Psalm 27:13 & 14

Be Still

Psalm 46:10 “God says, Be STILL and KNOW that I AM GOD”
Take time to be still in God’s Presence…hard for me to do because I think I need to be doing something always. This is a verse I need to be reminded of often.

However, it is in those still, quiet moments that God reveals Himself to me.

When I am lost in my own ways, running to get things done, I get anxious and forget He is near…offering me a solace… a safe place to go. Jesus endured the agony of the cross to secure His gift of Peace.

We can trust Him with our heart. Be still and listen…He is whispering to you.

Do Not Conform

“Do not be conformed to this world, but be transformed by the renewal of your mind, that by testing you may discern what is the will of God, what is good and acceptable and perfect.” Romans 12:2

If we continue to be conformed to the pattern of this world, then our allegiance is to this world. I used to try to satisfy both, one foot in the world and one foot in the kingdom of God. Not only was it a difficult life to keep up with…it was not God honoring.

One thing I found was that the world’s ways, the world’s values, are not God’s ways and values.

12 Tips to Grow Your Business & Enhance Your Life

    Your PASSION will keep you in FIRST PLACE!

    Have passion –Certainly for your business, but also for life. Your passion will help you overcome difficult moments and persuade people to work for you and want to do business with you.  I notice that people always flock to a person with passion. If it diminishes, take some quiet time to reflect on why you started the business and why you like being your own boss.                                                           Find your “why”…your compelling vision that drives your success, a central, significant reason for devoting yourself, your time, talents and energy into your business or makes your life more meaningful.

  2. Your major asset is YOU-Take care of yourself.  Your health is more valuable than the most expensive machine or computer software.  Exercise, eat right and get enough rest.  Maintaining your health and balancing your business and family time will give you energy that will enhance your mental outlook.
  3. Seize every moment-Look at every day as a gift filled with opportunities to rise above fear, self-doubt, and mediocrity.   Set specific goals to succeed and make every effort to exceed your own expectations.
  4. Set an example of trustworthiness and integrity-maintain a strong work ethic.  Treat others with honesty and respect and the business will come.  It’s not about the bottom line, but about building relationships.
  5. Be flexible, except with core values-At one point or another, your best laid plans will falter and will need to be changed.  Sometimes a trip in a different direction is just the way to increase growth.  However, NO matter the pressure for immediate profit, do NOT compromise your core values or integrity.
  6.  Don’t let fear of failure hold you back-Look at failure as an opportunity to learn.  If you encounter a roadblock, think of ways around it and take action.  There is more than one road to success.  There will be plenty of ups and downs as you build your business.  Learn from them and move on.  You cannot change the past, but you can use it to your advantage and not make the same mistake twice.
  7. Use your time wisely- It is crucial to think ahead and plan your course of action.  Schedule wisely.  Don’t put off doing something just because you think it takes too much time, is hard to start or is boring…do it anyway.  Procrastination leads to missed opportunities.
  8. Discover your innate power-Find the power within you…your power source and use it to fuel your passion, and release that greatness within you.  Use that power to deal with challenges.
  9. Believe-You need to believe in yourself, your company and your products.  Your confidence is contagious.  See yourself as a go-getter with the power to turn a no into a yes.  Be determined to blaze new trails to success.
  10. Have the right attitude-How many times have you seen the underdog team or player win over the more talented opponent?  Attitude is everything.  Stay positive and find ways to keep that first day freshness, enthusiasm and determination.  Reflect often on why you are doing what you do.
  11. Constantly improve yourself-Stay abreast of what is going on in your field and constantly improve your knowledge and skills. Enroll in classes or access self help tools that will help you improve yourself.
  12. Periodically step outside your comfort zone.  Challenge yourself to try something new.  Make a new friend, call an old friend, Take a class, make a cold call, go door to door or join a networking group or do a radio interview.  Complacency can be our worst enemy.  There is always room to grow, we just have to keep making the effort.

Most of these tips can also apply to enhancing our lives.

Of all these tips, passion is the most important.  We can learn the other 11 tips, but passion comes from within.  You cannot fake it for long.

Love your life, love what you do and do what you love.

Crispy, Delicious and Healthy Tortilla Chips

Homemade Tortilla Chips Week 6 Recipe 9

Serves: 3 to 4              Prep Time: 5 minutes             Total Time: 15 minutes

Ingredients:

  • 6 corn tortillas (larger size)(Misson brand is Gluten Free) (Joseph’s is low carbohydrates)
  • salt (optional, additional spice options listed in directions)
  • (I used ½ tsp sea salt, ½ tsp garlic powder, ¼ tsp paprika and ½ tsp ground cumin)
  1. Preheat oven to 400 degrees.
  2. Stack tortillas one on top of the other and use kitchen scissors or pizza cutter to cut them into 4 slices like you would cut up a pizza.
  3. Spread them out in a single layer on a cookie sheet (not air-bake) , spacing them at least 1/4″ apart (they will be chewy instead of crispy if not spaced properly). (NOTE: If you must use an air-bake pan, try 350 degrees for 20 minutes.).
  4. Shake salt and desired toppings over tortillas.
  5. TOPPING OPTIONS (choose any combo): SPICES: paprika, chili powder, cumin, onion powder, garlic powder (sparingly), cayenne pepper (sparingly, will add heat!). CHEESES: grated parmesan cheese, cheddar cheese, pepper jack cheese, etc. or try SWEET: cinnamon & sugar. Bake 8-12 minutes or until chips are starting to get crispy and slightly golden brown at the edges (check every 1-2 minutes after 8 minutes).
  6. Remove from oven and let cool 5-10 minutes before serving in order to let them fully crisp. Extra Crispy: put back in turned off oven at least 10 minutes or until ready to serve for extra crispy and warm chips (watch them, you may need to leave oven door cracked to prevent over browning).

Homemade Tortilla Chips #2 Week 6 Recipe 10

Serves: 6 to 8              Prep Time: 5 minutes             Total Time: 15 minutes

Ingredients:

  • 12 small corn tortillas
  • Spray olive oil or vegetable oil, for brushing on tortillas
  • sea salt
  1. Preheat oven to 400 degrees.
  2. Brush one side of each of the corn tortillas with a light layer of vegetable oil.
  3. Cut the tortillas into 8 wedges or shapes as desired.
  4. Place tortilla pieces on a single layer on a baking sheet.
  5. Sprinkle with salt. Bake 10 to 12 minutes or until lightly brown

His Peace

It isn’t easy to find peace in this world.  So many cares and so much pain & suffering. We are so busy taking care of areas of our life…children, spouse, aging parents, job, home, and the list goes on.

The world is revolving around us at a pace that leaves me spinning myself sometimes.

It is exhausting!  If we do not find a place to rest and find peace, we are easily overwhelmed and doomed to crash. No help to ourselves or those around us.

Where can we go to find solace…to renew?  The answer is simple really.

Jesus Himself knew the distractions and cares we would encounter. He gently calls us to come to Him…for rest, for peace.

JESUS says, “I leave you PEACE; MY PEACE I give you.  I do not give it to you as the world does.  So don’t let your hearts be troubled or afraid.”  John 14:27 (NCV)

On this Friday morning, I understand you have troubles and I am not belittling that.  You are exhausted from all you have to do.

You are amazing! You CARE so much and you DO so much.  Wouldn’t you like to share the load with the Author of your life? Let Him have it…spend time with Him and receive His amazing gift of peace.

Yeah, the world is still spinning around us and problems will continue to pop up, HOWEVER we can release that problem or person to Him and KNOW HE CARES and WILL HELP US THROUGH. Life seems a little brighter and it is that glimpse that renews us to face another moment.

Labor of Love

Happy Labor Day!  I hope you are enjoying time with family & friends!

Today makes me think of another type of labor.  The labor of LOVE…when we do things for others that BENEFITS THEM, NOT US. It can cost us MUCH, sometimes our very life.

I think of JESUS.  The LOVE that took Him to the CROSS to DIE…

Then He ROSE AGAIN to give us HOPE! He DID what He PROMISED.

JESUS CONQUERED DEATH, so WE COULD LIVE, so GOD would NOT SEE OUR SIN, We  are CLOAKED in HIS RIGHTEOUSNESS, given a CLEAN SLATE.

“Let us HOLD FIRMLY to the HOPE that we have confessed, BECAUSE we can TRUST GOD to do what He PROMISED.” Hebrews 10:23 (NCV)

Whenever we encounter rough patches in our life, we need to remember that God is ALWAYS watching over us….ALWAYS turning to good ALL things, things that the enemy meant to harm us.

“And we know that God causes everything to work together for the good of those who love God and are called according to his purpose for them”.  Romans 8:28 (NLT)

Every day we have the chance to start over.  No matter how stinky some days can be or the messes we have made or what we seem trapped in.  We will get through.
