Dark Chocolate Chip, Oatmeal /Cranberry Cookies

Oatmeal Dark Chocolate Chip Cookies with Cranberries Week 12 Recipe 5

DELICIOUS, CHEWY and MOIST
NUTRITIOUS TOO!

INGREDIENTS:

 ¾ to 1 Cup Brown Sugar

¼ cup shortening or butter

¾ cup applesauce

2 eggs, beaten or 3 egg whites

2 cups wheat flour

3 cups old fashioned oatmeal

1 ½ tsp baking soda

1/2 tsp fine sea salt

2 tsp vanilla

1 tsp cinnamon

1 cup dark chocolate chips

1 cup cranberries

INSTRUCTIONS:

Preheat oven to 375.

Combine wet ingredients and dry ingredients separately and then fold in together. Add chocolate chips and cranberries (and/or other fruit/nuts)

Mix well, drop by heaping tablespoon (or medium size meatball maker) onto a greased cookie sheet and squish down slightly with the back of a greased spatula.

Bake 12 to 14 minutes.

Makes about 4 dozen cookies.

You can also add nuts or other dried fruit.
